Bon App\u00e9tit has brought fresh, healthy, chef-driven, sustainable and local food choices to students, faculty and staff at Transylvania<\/figcaption><\/figure>\n\n\n\n

In\nJune, Transylvania became the first college in Kentucky to partner with Bon App\u00e9tit\nManagement Company<\/a>, an award-winning\nindustry pioneer whose mission is \u201cfood service for a sustainable future.\u201d In choosing Bon App\u00e9tit, Transy is looking to bring fresh,\nhealthy, chef-driven, sustainable and local food choices to students, faculty\nand staff. <\/p>\n\n\n\n

The \u201clocal\u201d part\nof that mission will be highlighted at lunch Tuesday, Sept. 24, when Bon App\u00e9tit\u2019s\nCaf\u00e9 Transylvania participates in the 2019 Eat Local Challenge<\/a>, a companywide\nevent celebrating farmers, producers and artisans annually with a 100% local\nmeal.<\/p>\n\n\n\n

According to Bon App\u00e9tit\u2019s\nwebsite, it is the first food service company to create and celebrate the Eat\nLocal Challenge annually. \u201cWe love celebrating our local farmers, ranchers,\nfishermen and food craftspeople and explaining to our guests why supporting\nthem is so vital to our food supply. Although we serve locally grown food every\nday in our caf\u00e9s, highlighting this extreme example of a 100% local meal has\nstarted lively conversations amongst guests and our staff,\u201d the company said. <\/p>\n\n\n\n

The Eat Local\nChallenge in Transylvania\u2019s caf\u00e9 will feature menu items sourced entirely from\nwithin 150 miles of the downtown Lexington campus. The featured ingredient \u2014 mushrooms\n\u2014 comes from Prayer Mountain Farms in Upton, Kentucky. Other providers \u2014 many\nof whom are featured daily in the caf\u00e9 \u2014 include: Marksbury Farms, Lancaster\n(beef and pork); Courtney Farms, Bagdad (vegetables); Mount Pleasant Acres,\nOwingsville (vegetables); Nate\u2019s Coffee, Lexington (coffee); Epping\u2019s on\nEastside, Lexington (pastries); O2 Urban Farms, Cincinnati (aquaponic greens); Hydrogrowers\nHydroponics, Pleasant Hill, Ohio (salad greens); That Guy\u2019s Family Farms,\nClarksville, Ohio (herbs,  vegetables);\nand Swallow Hill Jersey Dairy, Jamestown, Ohio (milks, creams, buttermilk). <\/p>\n\n\n\n

This past spring,\nTransylvania and Bon App\u00e9tit worked with the City of Lexington\u2019s Bluegrass Farm\nto Table initiative and its director, Ashton Potter Wright, to establish connections\nin the local food system. In August, the university\u2019s new coffee shop, Gratz Perk Caf\u00e9<\/a>, opened with locally roasted coffee and bakery items from\nLexington-owned food crafters. <\/p>\n\n\n\n

\u201cWe want food to\nbe a differentiator at Transylvania,\u201d said Michael Covert, interim vice\npresident of student life. \u201cFor our students, there\u2019s an interest in good,\nhealthy, local eating. Bon App\u00e9tit provides those options daily.\u201d<\/p>\n\n\n\n

Founded in 1987\nand now headquartered in Palo Alto, California, Bon App\u00e9tit currently operates\nmore than 1,000 caf\u00e9s in 34 states for private universities, corporations,\nmuseums and cultural institutions.
