They&#8217;re part of Transylvania\u2019s larger renovation of the cafe, operated by Bon App\u00e9tit Management Company.<\/p>\n\n\n\n<p>Wood for the tables \u2014 some of which have &#8220;live&#8221; natural-looking edges \u2014 comes from oak trees in the Chevy Chase neighborhood.<\/p>\n\n\n\n<p>&#8220;A lot of people are big fans of the whole business plan,&#8221; said Branch and Bark co-owner Luke Lilley, pointing out how these trees that have been removed for whatever reason (home construction, e.g.) might otherwise be destined for the landfill or wood chipper. &#8220;It&#8217;s just us getting a tree and turning it into beautiful lumber and items that come out of here.&#8221; (Branch and Bark had an influx of ash over the last few years because of the emerald ash borer, but that\u2019s slowed down.)<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.transy.edu\/1780\/wp-content\/uploads\/sites\/14\/2021\/07\/transylvania_tabletops2-810x625.jpg\" alt=\"\" class=\"wp-image-17355\" width=\"401\" height=\"309\" srcset=\"https:\/\/www.transy.edu\/1780\/wp-content\/uploads\/sites\/14\/2021\/07\/transylvania_tabletops2-810x625.jpg 810w, https:\/\/www.transy.edu\/1780\/wp-content\/uploads\/sites\/14\/2021\/07\/transylvania_tabletops2-350x270.jpg 350w, https:\/\/www.transy.edu\/1780\/wp-content\/uploads\/sites\/14\/2021\/07\/transylvania_tabletops2-730x563.jpg 730w, https:\/\/www.transy.edu\/1780\/wp-content\/uploads\/sites\/14\/2021\/07\/transylvania_tabletops2-768x593.jpg 768w, https:\/\/www.transy.edu\/1780\/wp-content\/uploads\/sites\/14\/2021\/07\/transylvania_tabletops2-300x232.jpg 300w, https:\/\/www.transy.edu\/1780\/wp-content\/uploads\/sites\/14\/2021\/07\/transylvania_tabletops2.jpg 1200w\" sizes=\"auto, (max-width: 401px) 100vw, 401px\" \/><figcaption>Inside Branch and Bark; above photo: co-owner Luke Lilley with a future Gratz Perk tabletop<\/figcaption><\/figure><\/div>\n\n\n\n<p>Check out <a href=\"https:\/\/smileypete.com\/business\/branch-and-bark-urban-sawmill\/\">this Business Lexington article<\/a> about Branch and Bark, which saves on expenses by locally sourcing wood, much of it from tree service companies.<\/p>\n\n\n\n<p>As for the Gratz Perk tables, Branch and Bark uses an innovative Festool DOMINO wood joining system and protects the tabletops with a water-based polyurethane that not only keeps them from scuffing but also makes the natural grain more visible (because it&#8217;s not glossy).<\/p>\n\n\n\n<p>Locally sourcing the wood for the tables complements Bon App\u00e9tit&#8217;s focus on serving menu items with local ingredients \u2014 and sustainability in general. Transylvania\u2019s food service provider <a href=\"https:\/\/www.transy.edu\/1780\/2021\/06\/transylvania-food-service-provider-announces-plan-to-reduce-carbon-emissions\/\">celebrates area farmers through an Eat Local Challenge<\/a>, and recently it announced a <a href=\"https:\/\/www.transy.edu\/1780\/2021\/06\/transylvania-food-service-provider-announces-plan-to-reduce-carbon-emissions\/\">new climate change
